Friday night came and I played some volleyball with Ash. My long lost volleyball partner...it's been 3 years now we haven't played together on a team. Nope. We went on to play college ball but I am so proud of us both. 3 years strong and we've been on the floor every year. Not too many people get to say that at this level. Love her. Oh and we saw Twilight together. Ahhh :) We decided we love it so much because it's this fantasy land we can escape to. Almost being 21 years old I laugh at myself for saying that but so true.
Taylor had to work black friday and the rest of the weekend so that left me home with my family and Whit. That kinda sounds like a bad thing but most definitely NOT. Her and I have so much fun together it almost shouldn't be allowed. We really don't even laugh at funny things. More like everything is funny. I guess it really helps me live life to the fullest because there is never a bad moment.
Now for the start of this week that I have been meaning to get to..AND THE FOOD!!
I decided to make some potatoes au gratin, asparagus and a pork loin. Oh and for dessert I made chocolate molten lava cakes with homemade whipped cream and sugar covered raspberries on top. Super easy and delish!
Here's what it looked like. Only if I could give you all taste testers...
Au gratin potatoes: Chop up onions and peel and slice potatoes. Put 1 stick butter, 1/2 onion, pepper, salt and garlic in a pot and bring it to a boil. Add cheese and milk. Spray Pam in baking dish and add half of the sliced potatoes and added half of the cheesy, milk, onion mixture. Add the rest of the potatoes and the cheesy milky mixture. Bake in the oven at 350 until it gets brown on top. Add shredded cheese on top and bake some more.Asparagus: Put it on a baking pan with olive oil, salt, pepper and lemon juice. Mix up and place in oven at 350 for 15 minutes or so.
Pork loin: I actually cheated on this step because I had so many things to do with the rest of the meal and bought it in a package at Meijer. Talk about easy. Threw it in the oven for like 45 minutes and perfecto!
Homemade whipped cream: Heavy cream, little sugar and little vanilla and mix it until you get stiff peaks. Take raspberries and dip them in sugar.
Choc. molten lava cakes: Melt chocolate and butter and add to beaten eggs and sugar. The eggs and sugar should be fluffy and pale. You basically beat the yellow right out of them. Fold the eggs into the chocolate and add 1/2 cup flour. I just threw it in a muffin tin because here at college I don't have a fancy ramequin. Worked just fine!
