My boyfriend just bought me a gift and he can't stop talking about it. I don't think he can honestly go 21 days without showing me it...he talks about hints of the gift every 5 minutes. Really makes me laugh :)
I am just so excited to give gifts to other people. Seeing their faces light up as they open up a gift is definitely the best part of Christmas...well besides the fact that Christ died for us and I will forever be thankful.
Today's blog is all about roasts.
Remember the pork loin roast I made last week? Well I used it in leftovers for a great quick burrito. Made a can of refried beans on the stove with salsa and shredded cheese. Took a burrito tortilla and put some of the bean mixture on it. Then added the pork. I shredded the pork and put it in a pan. Added water and taco seasoning and let it cook for a few minutes. Added this taco pork to the burrito on top of beans. Then cheese and little mexican rice.
Rolled it up and put oil in sauce pan just enough to get a good crisp on all 4 sides of the burrito.
Tonight I made a beef roast in the oven. Usually do in crock pot and the flavors were great in the oven but I will go back to the crock pot. It just makes it more tender.
First I patted the rump roast dry and covered it in salt, pepper and flour. Put olive oil in big pot on stove and seared all sides of roast so it had a nice brown outside.
Meanwhile, I chopped up 1/2 an onion, 1/2 stick of butter, garlic and put in 9 x 13 pan. Added fresh rosemary and thyme to this "bed" for the beef. Then set beef on top and made a tent with aluminum foil and baked in oven for 3 1/2 hours at 350 degrees.
This makes your house smell so good!!
