Christmas Break Goodies & SNOW (well I can only hope)

Well hello there!
It is almost Christmas and I am excited although this isn't the excitement I was hoping to feel. Where is the SNOW!? Most people complain about it but hey, we live in Michigan here folks. Move lol. But I love the snow. No I don't want to live in it all year round but I live on a lake so what is better than waking up and going ice skating or playing hockey on the ice.  We used to ride snowmobiles and quads out there too with sleds. Last year a hugeee group of my really good friends went to Rockford to this snow park for tubing called Pando. Took our motor home and Holaski's (best friend family) with food and drinks so we could go sled then come in to eat and get warm and go at it again. Yah...doesn't look like that is happening AT ALL.
What a bummer. Looks like I will have to do the whole inside out pajama thing like I used to when I was younger.
I remember this one time I had a few girls over for a slumber party. It was a school night and it was horrible out so we totally thought we'd have a snow day. We did EVERYTHING we could. Spoons under the pillows, snow dance and wore our PJ's inside out but no frieken snow. Off to school we went. It was a great night though. Made lots of memories.

My amazing boyfriend is up at school working his bum off so he doesn't get to come home until Christmas Eve and has to go back to work up at Saginaw the day after Christmas. Boo it stinks. He has been alone up there seeing as how everyone else is home so I went and visited him for a couple nights. We did a lot...
1. Ate at Bob Evans for breakfast - yummy :)
2. Cleaned his bathroom, bedroom, living room, kitchen. Basically every nook and cranny in his apartment. Floor and all. I was on my knees scrubbing the floor by the toilet. Nasty lol never want to do that again.
3. Watched some good ol' tv
4. Shopped at meijer for hours because we can never make up our minds..
5. Cuddled...it's my favorite :)
6. Made some spaghetti and burnt the Texas Toast. I was the one who burnt the toast. How embarrassing.
7. Made a midnight snack of popcorn and rice krispy treats on a plate haha. Nothing fancy. Two forks and a pile of sweetness.
It was great to just be around him for a bit. Makes it not so lonely for the both of us.

Here's our krispy treats:
I always add extra butter and a little less krispies because it's extra gooey and delightful. Fun way for the boyfriend to help...well Taylor did anyways because he likes to stir the marshmallows and butter. 
Trust me!


I surprised him and made his favorite cookies - RED VELVET with Chocolate Chips and every time he ate one he couldn't stop telling me how awesome they were. Let's hope he wasn't lying haha.


Here's the recipe:
recipe from How Sweet It Is
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 tsp red food coloring
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup cocoa powder
1/2 cup semi-sweet chocolate chips
Cream butter and sugars. Add egg and vanilla, mixing well. Beat in food coloring.

I added a large scoop (big spoon you'd eat cereal with size) of sour cream to add some moisture 
because a lot of times these cookies are like concrete and we want moist! 
Also, I always use an ice cream scoop that retracts (makes it so easy) but I use two scoops because these cookies don't spread. So keep that in mind that you do not need to place them inches apart. 
Keep in mind the bigger the cookie the longer it needs to bake. 
So I doubled the baking time basically but kept an eye on them.

I'm going to bake a lot of goodies Friday so stay tuned for some more holiday yummies!
